Chickpea Free Hummus

This chickpea free, gluten free, dairy free, anti-inflammatory hummus is the perfect snack, dressing or dip!

Ingredients

  • 2 cups Chopped Zucchini
  • 1/2 cup Organic Tahini*
  • 1 Lemon, juiced
  • 3 cloves Organic Garlic
  • 1/2 Ground Turmeric
  • 1 tsp Ground Cumin
  • Salt & Pepper, to taste

Instructions

  1. Preheat your oven to 200F. Place your garlic cloves with the skin on on a parchment paper lined baking sheet. Roast till golden brown, approximately 20 minutes.
  2. Roughly chop zucchini and add to food processor. Once the garlic is roasted, remove the skin and add garlic and all other ingredients to the food processor.
  3. Process till it is fully mixed and has a creamy consistency. You may have to stop occasionally to scrape down the sides.
  4. Taste test along the way to add your salt and pepper!
  5. Place in a bowl and enjoy with veggies, crackers or any way you would like! This hummus will keep for 5-7 days in the fridge and freezes really well for up to 6 months.

Notes:

*Ensure your tahini does not contain any inflammatory oils or other ingredients.
